Fideuá (called fideuada in Valencian) is a typical dish from the city of Gandía, in the Valencian Community of Spain. The particularity of this preparation is that it is very similar to the famous paella, but with a substantial change: instead of rice, it has noodles. There are two types of noodles with which fideuá is traditionally prepared. They can be extremely thin and small noodles or thicker and curly noodles.
